These Candy Corn Parfaits are a naturally sweet and healthy Halloween snack that offer a boost of protein in an adorable little package that your kids are going to love!
Delicious & Adorable Halloween Snack
I can’t say I really enjoy eating candy corn- but there is something so adorable and nostalgic about them. They just scream Halloween. As soon as we see those yellow and orange bags start popping up in the grocery stores, we know that spooky season is right around the corner.
I love finding fun, healthy, and tasty ways to celebrate the holidays. And these little Candy Corn Parfaits fit the bill perfectly! If you’ve never tried whipped cottage cheese, this is the perfect time to start. The texture is smooth and fluffy- perfect for people who are sensitive to the texture of regular cottage cheese. Plus, these little halloween treats have only 4 ingredients (unless you want to add a little garnish), come together in about 5 minutes, and they couldn’t be cuter. Because let’s face it. Cute food is just more fun to eat.
Ingredients You’ll Need to Make These Candy Corn Parfaits:
- Pineapple
- Mandarin Oranges
- Cottage Cheese
- Maple Syrup
How to Make Candy Corn Parfaits:
- Chop the pineapple. Peel, core and dice your pineapple into bite-sized pieces. Set aside.
- Whip the cottage cheese. Place your cottage cheese in a food processor. Blend for about 30 seconds; scrape down the sides and blend until super creamy and fluffy. Add the maple syrup and pulse until blended.
- Layer the parfaits. To small clear serving glasses, add a layer of chopped pineapple, a layer of mandarin oranges, and a layer of whipped cottage cheese.
- Enjoy! Add a few sprinkles or a candy corn for garnish and dig in!
Tips & Suggestions:
You’ll need to use a food processor to get the right consistency for the whipped cottage cheese. A blender can over whip it and you’ll end up with a liquidy consistency. This is a great way to enjoy cottage cheese for people who don’t like the texture of regular cottage cheese!
Greek yogurt or whipped cream make good substitutes for the whipped cottage cheese.
You can use canned pineapple if desired, however, fresh pineapple is so much better and has a much brighter yellow color.
Cover leftovers or place in an airtight container. Store in the refrigerator for 2-3 days.
