Delicious, Flavorful, and Refreshing Cucumber Sandwiches
Sometimes the best things in life are simple. These Cucumber Sandwiches are absolute proof of that! Just cucumbers, an easy (but incredibly flavorful!) herbed cream cheese, and bread. But dang are those adorable little sandwiches addicting. Light, flavorful, and refreshing- they are perfect for lunch, snacks, or party fare. Not to mention inexpensive and so fast to throw together!
Listen, you don’t have to stay all delicate and finger-foody here either. I have also grabbed some nice hearty whole wheat bread, slathered on a generous amount of the cream cheese, and topped it with loads of thick cucumber slices. So delicious, and so satisfying. So whether you’re feeding yourself or a crowd, these cucumber sandwiches are guaranteed to please!
Ingredients You’ll Need to Make Cucumber Sandwiches:
- Cream Cheese– We used regular cream cheese.
- Fresh Dill & Chives– There are only a few flavors going on here, so it is important to use fresh!
- Plain Greek Yogurt– This will lighten up and soften your cream cheese spread.
- Lemon Juice– Adds a nice citrusy tang. We used fresh lemon juice!
- Salt and Pepper– Add to season.
- English Cucumbers– You want to use english cucumbers here. They have small seeds and a thin skin, so there is no need to peel or deseed.
- White or Wheat Sandwich Bread– You want to use a nice, soft sandwich bread for these cucumber sandwiches.
How to Make Cucumber Sandwiches:
- Make the herbed cream cheese. Place softened cream cheese in a bowl. Mince the herbs, and add them to the bowl with the greek yogurt, lemon juice, salt and pepper. Stir well, taste, and add more seasoning if needed.
- Slice cucumbers and trim bread. Grab your cucumbers and slice them nice and thin. I used a mandolin to get nice even slices. If desired, trim the crusts off your bread.
- Assemble the sandwiches. Spread each slice of bread with a thin layer of the cream cheese mixture. Top with a couple layers of sliced cucumbers. Add top slice of bread, cream cheese side down. Cut into triangles if desired.
- Enjoy immediately!

How long will cucumber sandwiches last?
These little sandwiches are best enjoyed within an hour of making them. Otherwise, you run the risk of the cucumbers getting soggy. But, if you are trying to plan ahead, the cream cheese spread can be made a day or two in advance.
Variations
For a fun and delicious variation, use cocktail rye bread. Add a nice smear of the herbed cream cheese, top with a couple slices of cucumber, then garnish with a sprig of fresh dill.
Spread the cream cheese mixture on a tortilla. Top with sliced cucumbers and roll up tightly. Slice into 1-inch rounds for cucumber pinwheels.
Add a layer of thinly sliced radishes along with the cucumbers.

Place softened cream cheese in a medium bowl. Mince the fresh dill and chives and add them to the bowl. Add the Greek yogurt, lemon juice and salt and pepper to taste. Stir to combine everything until well blended.

Using a spatula, evenly spread the cream cheese mixture onto 4 of the slices of bread leaving a small border around the edge.

Using a mandolin or sharp knife, slice the cucumbers into very thin slices. Layer cucumber slices on top of the cream cheese mixture on the bread. Top with the other slice of bread.

If you want to be extra fancy, cut the crusts off the bread and then cut the sandwiches into small squares. Serve immediately and enjoy!
